I love cooking. I love trying new recipes and creating my own. I am addicted to Mexican food. I like it hot and spicy!! The hotter the better. My family is a bit mixed on their dietary restrictions. My 2 sons are vegetarian. No meat products at all for either of them. I do not eat red meat, pork. or fish. The only meat I really eat is chicken, some turkey, and shellfish. I tend to lean towards more vegetarian meals, however. I went veg at age 13, because I am a huge animal lover. I stayed true to that diet for 8 years, then I started adding some animal products back in. My youngest son made his decision at age 5 and has never wavered. My oldest went veg last year after seeing the documentary Food, Inc. in health class. We tend to eat mostly healthy foods. I’m not one for fancy, high end stuff. I like good food, fresh food. On this page, I will add some of my favorite things and I will post when I try something new.
Last week, I tried a new soup. We love soup around my house, even in the summertime. I tried a roasted corn and poblano soup this time. I made fresh tortilla strips as well. I cut up tortillas, tossed in olive oil, chili powder, and salt and baked for a few minutes.
I charred frozen corn in a skillet and broiled fresh poblano peppers in the oven. I used veggie broth with tomato puree and added the veggies.
Put the tortilla strips in bowls, ladle the soup over top and top with various toppings. We like shredded cheese, white queso fresco, and sour cream. Great soup!!
